Watch any Food Network show, particularly Robert Irvine's "Restaurant Impossible," and you'll soon realize the food industry is risky business. Not many restaurants can stand the test of time, but Kingston's Blue Mountain Bistro has thrived for two decades. They celebrate their 20th anniversary this Saturday and Sunday—stop by during regular hours for a free slice of cake.
Owners Mary Anne and Richard Erickson originally opened their restaurant at Woodstock Golf Course on July 14, 1993—the day they got their liquor license. The date also marks Bastille Day, a happy coincidence for the French Mediterranean eatery. Chef Erickson got his start in Switzerland and later cooked in the South of France before running French kitchens in New York City. With a firm basis for their European cuisine, their business succeeded; however, the Ericksons realized the importance of changing with time.
They evolved into the Bistro as you may know it now: A tasty lunch spot specializing in catering and what they call "slow-cooked fast food." In addition to lunch fare like grilled vegetable paninis and Moroccan chicken salad, the Bistro-to-go offers frozen dishes such as soups and pot pies, including gluten-free choices, to take home. You can also browse their gourmet food store and bakery for other tasty treats.
