We Have Liftoff: Moonburger New Paltz Opens April 22 | Restaurants | Hudson Valley | Chronogram Magazine

Disruption is a term more often used in the tech sector than the fast food industry, but that’s exactly what ex-marketing exec and local entrepreneur Jeremy Robinson-Leon did with Moonburger, his flagship drive-through in Kingston. Meatless burgers, spicy fries, vegan milkshakes—fast food that appeals to the mainstream while quietly (but dramatically) reducing its environmental footprint.

Last October, Moonburger announced it would be expanding its highly scalable model with a second location in New Paltz in the old Mexicali Blue spot on Main Street. The sign has gone up outside and the day has finally come: Moonburger New Paltz will open the doors on Saturday, April 22 at 11am. There will be no drive-through component here, but an interior space with walk-up kiosk ordering mostly for takeout, though there are a handful of counter stools.

In the style of Moonburger’s retro-futuristic branding, the interior sports a clean, white-and-red design with subtle but playful details like the moon light. The interior design was led by Danielle Epstein, design director of Home Studios.

"Every time I step through the door, I can’t believe it’s really, really, actually real," Robinson-Leon says. "It’s magical. And somehow it feels like another beautiful planet and home sweet home all at once."

On the food front, expect MB’s signature tight menu of offerings (oat milk shakes, griddled Impossible burgers—with and without cheese, fries—spicy and not) plus a special weekend treat.

Starting April 28, on Fridays and Saturdays nights from 11pm to 2am, Moonburger on Main Street will switch over to a night shift menu with plant-based nuggets and waffle fries. This late-night special, available exclusively at the New Paltz location, is sure to be a hit with the hungry college kids.

“I feel very grateful for all of the support and enthusiasm and very warm welcome from the New Paltz community,” Robinson-Leon says. “Happy to say we’re now at 50 team members between the two locations!”

Moonburger New Paltz will be Monday to Friday, 11am to 10pm and late night on Friday and Saturday from 11am to 2am.
