Montauk Catch Club, known for delivering fresh seafood directly from the docks to New York City and the Hudson Valley, officially opened its long-awaited first brick-and-mortar location today in Rosendale. In a radical repurposing of the space,ย the new Clubhouse with its bright, salmon interior takes over the former Cuties strip club as a dual-purpose seafood market and casual-dining fish shack. Here, patrons can find everything from pristine fish fillets to prepared dishes, all served in a relaxed, coastal-inspired setting.

The Club was launched by chef Savannah Jordan and fisherman Parker Hollinger, who met in Montauk while working at Ruschmeyerโ€™sโ€”Jordan as executive chef, Hollinger managing the fish docks. Jordan, a Culinary Institute of America grad, had already built a reputation at elite restaurants like Le Bernardin and Maryโ€™s Fish Camp, while Hollinger had put in his time learning to grade and butcher fish at Gosmanโ€™s Fish Market for high-end restaurants. Their shared passion for sustainable, high-quality seafood led to a partnership that began as a response to pandemic-era supply chain challenges.

In 2020, with restaurants shuttered and demand plummeting, Hollinger saw an opportunity. With a glut of exceptional seafood and nowhere for it to go, he began selling fish directly to neighbors in Brooklyn. The overwhelming interest prompted him to call Jordan and suggest teaming up. Montauk Catch Club was born with a simple but rare model: catch or buy the fish themselves, handle it personally, and deliver it fresh to customers, cutting out middlemen entirely.

Their offerings quickly stood out. Weekly selections have included sushi-grade fluke, tuna, butterfish, โ€œlike buttahโ€ swordfish, and shrimpโ€”sourced either by Hollinger and Jordan directly or bought off trusted boats. They became mainstays at Hudson Valley farmers’ markets, especially in Rosendale and Beacon, where word-of-mouth helped them build a loyal following. Jordan has noted that their Hudson Valley base is particularly community-focused and has become one of the Catch Clubโ€™s most enthusiastic and fastest-growing markets.

Now, customers can find them not just at markets or through local deliveries, but at their very own Montauk Catch Clubhouse, a permanent space designed to showcase their seafood philosophy. The Rosendale location features a market with a dozen varieties of fresh fish, curated pantry goods, house-made sauces, and prepared foods like shrimp dumplings and lobster salad. Highlights include oysters on the half shell ($20 for a half dozen, $36 for a dozen), scallop ceviche served with tortilla chips ($16), and grilled head-on garlic shrimp with green sauce ($24). This new home base strengthens the Catch Clubโ€™s mission of bringing dock-fresh fish to the region while deepening its ties to a community that has supported them from the beginning.
