In opening All That Java, Samantha Sapienza took her inspiration from the West Coast. "I grew up in New York City and Millbrook and then spent 15 years in Seattle before moving back to Rhinebeck four years ago," she says, "and I felt like Rhinebeck deserved the kind of coffee place I loved so much out there. And people are loving it."
Sapienza built a tiny house addition on a trailer in which to brew her espresso-based magic and moved it across from the county fairgrounds on Route 9.
"Rhinebeck doesn't allow a drive-through; I'm still trying to figure a way to make it so people won't even have to leave their cars in winter. We have outdoor seating in nice weather, but everything is to go; we sell small bites of baked goods so you're not committed to juggling a huge chunk of food.
