What better way to celebrate the fall season than by enjoying some impeccably prepared game meats? The Culinary Institute of America (CIA) will embrace the peak time for game cuisine at their upcoming Game Dinner with Burgundies at the Bocuse Restaurant and Game Lunch at American Bounty this November.

Game Dinner with Burgundies

The Bocuse Restaurant will deliver a four-course game dinner on Wednesday, November 6, at 6pm. With a $95 prepaid, all-inclusive ticket, guests will savor classic French game dishes created with local venison, rabbit, and pheasant—expertly paired with French Burgundy wines that are sure to make you go wild.

The menu includes: Rabbit two ways—Rillette and terrine, Pheasant sausage with Calvados, apple, and French green lentils casserole, Venison Rossini, and Beignet with red plum confiture, vanilla diplomate cream, Bouchard granita.

Hudson Valley Game Lunch

The Hoof & Feather Hudson Valley Game Lunch at American Bounty, on Wednesday, November 20, will celebrate all things Hudson Valley with a four-course lunch of game meats and birds local to the region. For $59, prepaid and all-inclusive, the meal will also be topped off with a luscious dessert and paired with Millbrook Vineyard wine.
