Recipe: Cervantes Cocktail

Gable Erenzo left his role as Chief Distiller at Tuthilltown Spirits to pursue a craft spirit collaboration with the local 4th generation orchard, Dressel's Farm. This project evolved into an on-farm nano-distillery that makes its signature apple brandy using the bounty of the Gardiner and New Paltz fruit farms. On Main Street in Gardiner, you can find the Liquid Mercantile, a chic little spot which serves as their tasting room, retail shop, and eatery.

At Gardiner Liquid Mercantile, the seasoned bartenders are always experimenting with new ideas for their homemade cocktails. If you stroll in there on any night of the week, the bartender will channel your mood into liquid form. And they guarantee that you'll like it—otherwise the drink is on them.

Currently, their most popular drink is a bourbon- and brandy-based concoction called The Cervantes. The cocktail is well-balanced and full of flavor, using both plum and orange bitters to bind the tastes together. GLM's signature apple brandy is for sale at the bar/restaurant for $25 a bottle. So buy that brandy, heed the following recipe, and drink up!


  • 1 oz. Hudson Baby Bourbon
  • 1 oz. GLM Apple Brandy
  • 3/4 oz. Apricot Liqueur
  • 3/4 oz. Brotherhood Ruby Port Wine
  • 1-2 Dashes Plum Bitters
  • 1-2 dashes Orange Bitters
