The Hudson Valley’s fast-casual burger landscape is about to gain a heavyweight. On March 24 at 10:30am, Shake Shack will open a new restaurant at 35 Winslow Gate Road in Poughkeepsie, in the Hudson Heritage development just off Route 9 across from Marist University. The opening marks the brand’s third location in the Hudson Valley and its 67th in New York State. The restaurant is sited in the former Cue & Brew BBQ location and will operate daily from 10:30am to 11pm.

For a company that began as a humble hot dog cart in Manhattan’s Madison Square Park in 2001, Shake Shack’s expansion into the Mid-Hudson region reflects how far the brand has traveled. The original stand was launched as part of a public art project meant to draw visitors into the park; its popularity quickly turned the cart into a permanent kiosk and eventually into a global fast-casual chain known for its burgers, crinkle-cut fries, and frozen custard shakes.

Behind the concept is restaurateur Danny Meyer, founder of Union Square Hospitality Group and one of the most influential figures in American dining over the past three decades. Meyer built his reputation with restaurants such as Union Square Cafe and Gramercy Tavern, establishments that helped define a style of hospitality that emphasized warmth, attentiveness, and a sense of place. Shake Shack translated that ethos into a more casual format—what Meyer has often described as “fine-casual”—pairing high-quality ingredients with the accessibility of a roadside burger stand.

The Poughkeepsie location joins an existing Shake Shack at Woodbury Common Premium Outlets in Orange County. A licensed location also operates on the New York State Thruway in Sloatsburg, though the Poughkeepsie restaurant represents the brand’s first standalone presence in the Mid-Hudson Valley.

Its arrival reflects the continued growth of the Hudson Heritage development, a mixed-use complex on the former Hudson River Psychiatric Center campus that has been steadily filling in with retail and residential projects in recent years.

Shake Shack is planning several opening-day promotions to mark the debut. The first customers through the doors on March 24 will receive custom Shake Shack tote bags while supplies last. The company will also use the launch to support a local cause: for every sandwich sold on opening day, the Poughkeepsie restaurant will donate $1 to the Regional Food Bank of the Hudson Valley, which works across the region to combat hunger and reduce food waste.

  1. Good for Poughkeepsie, the underdog! Great that they are opening here rather than in Woodstock or Rhinebeck.
