Winter is the time for all the root veggies and storage crops to shine. Carrots, potatoes, onions, turnips are the stars of the hearty stews and roasts that keep us warm and sated through the cold months. Plenty of upstate farms offer winter CSAs to keep you in fresh local produce all year round, and with cold frames and greenhouses, many of these growing operations are able to extend the season to bring you freshy, hardy greens like kale and spinach well into the new year. And in the Hudson Valley, there is no shortage of pastured, grass-fed beef, pork, and chicken, free-running eggs, milk, dried herbs, and fruit. So there is not reason to stop sourcing your groceries locally during the winter.
With COVID numbers climbing across the country, and the possibility of another state-mandated lockdown forever lurking around the corner, it feels extra important this year to secure our own food sources, while helping a local farmer stay in business.
