It’s not as big an industry as it was in days of yore, but cider makingโ€”hard cider, specificallyโ€”was a staple industry of the earliest European settlers in the Hudson Valley and many of the following generations. And thanks to Cider Week (October 18-27), an effort launched in 2011 by Glynwood, a nonprofit organization promoting sustainable local agriculture, America’s oldest libation is making a crisp comeback.
