For the past few years, Hudson Valley locals may have spotted Oui Oui Cuisine, a European-inspired pink food trailer, popping up at breweries, vineyards, and community events. Now, the husband-and-wife team behind the business, Georges and Laura Goba-Byrne, have taken a major step forward, opening a permanent stall inside Hudson Valley Food Hall in Beacon.

The couple launched their catering business three-and-a-half-years ago, not long after moving to the Hudson Valley. Weddings, community gatherings, and a weekly residency at the New Hamburg Yacht Club gave them a foothold in the local food scene. In 2023, they upgraded to a custom-built food trailer, bringing their dishes to venues like Locust Grove Brewing in Milton, Millbrook Vineyard, and The Yard in Beacon.

By this summer, the couple knew they were ready for a steadier base of operations. “The food truck was wonderful, but it’s hard in the winter,” Laura explains. “A lot of people were messaging ‘Where can I get your poutine?’ and we just wanted to really be settled somewhere to have a day-to-day business.” In late July, they moved into the stall formerly occupied by Moreish at the Hudson Valley Food Hall, navigating the transition in just a matter of weeks and opening with the busy fall season on the horizon. Their overhanging menu, painted the same pastel pink as the trailer, makes the new location an easy spot.

Oui Oui Cuisine reflects both halves of its ownership team. Georges, who trained in the kitchens of The Standard High Line and Soho House Hotel in New York City, brings French technique and a love of European street food. Laura contributes both front-of-house expertise and the creative vision behind the business, from branding to photography. Together they’ve built a menu that leans on European cafe traditions while staying playful: a croque monsieur on brioche with gruyere, ham, and bechamel ($14); the Oui Oui Baby: chicken, bechamel, hash browns, gruyere, lettuce, tomato, panini pressed on a Portuguese roll ($14); and a Bavarian pretzel  with your option of beer cheese or honey mustard ($8). Their brisket poutine —fries topped with slow-cooked brisket, gravy, cheese curds, and pickled onion ($16)—has already become a customer favorite.

The food hall has also given them room to experiment. Beginning this week, Oui Oui is launching a late-night menu Thursday through Saturday from 9pm to 1am (or later, depending on demand). At the center is the Irish Spice Bag , a Dublin street-food cult favorite made of fries, fried chicken, onions, and peppers tossed in Chinese spices and served with Irish curry sauce ($17). “It’s been gaining a lot of traction on Instagram and TikTok,” Laura says. “People here are surprisingly familiar with it—and really excited.” She adds that customers have already tried to order it during the day, so they’re planning to fold it into the regular menu, too. A brunch menu is also underway, with items like brioche french toast with blueberries, strawberries, and honey ($10) and a smoked salmon and egg topped croissant with dill cream cheese ($14).

Hudson Valley Food Hall, which has incubated other vendors that have gone on to open full-scale restaurants, is giving Oui Oui a chance to expand its reach while remaining rooted in community. “We have a yearlong lease with the option to extend, but long term, we’d love to have our own brick-and-mortar in Beacon or somewhere in the Hudson Valley,” Laura says. “In the long term, we see ourselves hopefully moving into a more permanent space that’s either in Beacon or somewhere in the Hudson Valley…maybe a five to 10 year plan. But we’re pretty happy here right now.”

Oui Oui Cuisine is open Thursday through Monday inside the Hudson Valley Food Hall in Beacon. Catering remains a major part of their business, but fans finally have a consistent spot to stop in for a croque, a brisket poutine, or that late night spice bag—no matter the season.
